It’s the Time of Year for an Iced Coffee Made with Flaxmilk!

Everywhere we go, folks are telling us that they are loving Flaxmilk – from Buda, Texas to New Hartford, NY. This week, on our Facebook page, a comment was made about how good Flaxmilk is in Iced Coffee. In fact, it’s the time of year when a cool, refreshing drink is just what the doctor ordered. Why not please your doctor and yourself by making your favorite iced coffee with Flaxmilk?

We like this recipe from allrecipies.com because it’s way simple to make. Just swap out the milk for Flaxmilk, and you’re ready to go.

Original Recipe Yield 1 serving

Ingredients

* 2 teaspoons instant coffee granules
* 1 teaspoon sugar
* 3 tablespoons warm water
* 6 fluid ounces cold milk*
(substitute Flaxmilk instead)

Directions

1. In sealable jar, combine instant coffee, sugar and warm water. Cover the jar and shake until it is foamy. Pour into a glass full of ice. Fill the glass with milk. Adjust to taste if necessary.

Flax Cupcakes Worthy of a Royal Celebration!

Today’s Royal Wedding gives us cause for celebration.  Or rather, we have decided to take pause and celebrate the royal union of Will and Kate with what else?  Flaxy Carrot Cupcakes!

All jokes aside, we wish the Royal Prince and Princess well, but these Flaxy Carrot Cupcakes are so good, you will want to bake them all year long – wedding or no wedding.   Consume them often, with no guilt and the knowledge that these cupcakes, unlike many others, actually do contribute to your good health!

Flaxy Carrot Cupcakes (Recipe Courtesy of Jeanie Vein)

2 Cups Sugar
3 Cups ground Flax
1 1/2 – 2 cups cinnamon apple sauce
4 eggs
2 cups grated carrots
2 Cups Flour
1 tsp. baking soda
1 tsp. baking powder
1/4 tsp. salt
1 1/2 tsp. cinnamon
1 cup raisins

Pre heat oven to 350.
Combine sugar and flax, mix well. Mix in eggs and apple sauce. Stir in
carrots.
In separate bowl combine dry ingredients.
Add dry mix slowly to egg mixture combining thoroughly.
Stir in raisins.

Fill cupcake liners almost full. Bake until a toothpick comes out clean
from the center.  Allow to cool.

Frosting

2 (8oz) packages of cream cheese, softened
1/2 cup (1 stick) butter, softened
1 tsp. vanilla
2 1/2 – 3 cups cups powdered sugar

Cream together butter and cream cheese. Mix in vanilla, then gradually stir
in powdered sugar, until
you reach desired consistency.
